Manzanilla: the wine of the sea

Manzanilla is a dry white wine made with palomino grapes. It is only produced in the bodegas of Sanlúcar de Barrameda city because of its special climatic conditions, that favour the formation of velo de flor which gives the wine its distinctive characteristics.

Manzanilla is the ideal match for prawns and shrimps, anchovies with vinegar, cured salted tuna, salads or cured meat.

Fino: the other 

Fino is a dry white wine, as the Manzanilla, aged under the veil of flor in American oak butts using the well-known method of sherry wine “Criaderas y Soleras” in the bodegas of Jerez de la Frontera and El Puerto de Santa María. 

+ APERITIF

Fino is an ideal partner for tapas or snacks, it is recommended to combine with cured meat like Iberian pork products (chorizo, salchichón, iberian ham) but also it is good for paring with shellfish and anchovies.

+ MAIN DISHES  

A glass of Fino could be combinated with a dish of clams with wine or some baked fish; sushi or sashimi are a really good options aswell.

Amontillado

Another kind of sherry wine, very unique thanks to its aging process. Made from palomino grapes, Amontillado starts under the veil of flor like Fino and Manzanilla and later this flower dissapears and the wine is exposed to oxidation. a extraordinary and complex wine.
